
Spiced Sweet Corn Microwave Risotto

Ingredients
Risotto
· 2 pouches Ralston Family Farms Indian Spice Basmati Rice
· ¾ cup chicken or vegetable broth
· 2 tablespoons unsalted butter
· 1 cup fresh corn kernels (from about 2 ears) or frozen, thawed
· 1 cup freshly grated Parmesan cheese
· Sea salt and freshly cracked black pepper, to taste
Optional Garnish
· 2 tablespoons chopped fresh chives or cilantro
· Parmesan cheese
Instructions
1. Microwave the Ralston Family Farms 90-second rice according to package directions.
2. Transfer rice to a microwave-safe bowl. Stir in broth, butter, and corn.
3. Microwave again for 1–2 minutes, stirring every 30 seconds, until the broth is mostly absorbed.
4. Stir in parmesan until creamy and season with salt and black pepper.
5. Option to top with fresh herbs and more parmesan before serving. Enjoy!
