Mediterranean Shrimp Tostadas with Tzatziki Rice

Ingredients
Tzatziki Rice
1 pouch Citrus & Dill Mediterranean Basmati Rice
1 cup plain Greek yogurt
½ cup shredded English or Persian cucumber
1 tablespoon fresh lemon juice
1 clove of garlic, microplaned or minced
1 tablespoons chopped fresh dill
1/8 teaspoon sea salt or more, to taste
Shrimp Salad
8 cooked shrimp, chopped
½ cup chopped English or Persian cucumber
½ cup chopped kalamata olives
½ cup chopped cherry tomatoes
¼ cup sliced red onion
¼ cup chopped Italian parsley
¼ cup fresh lemon juice
¼ teaspoon sea salt or more, to taste
Serve with
Tostadas
feta cheese
thinly sliced radish
more fresh herbs

Instructions
1. Use hands to separate Cilantro & Lime Mexican Style Jasmine Rice within pouch. Tear seam at the top as directed and microwave for 90 seconds.
2. In a medium bowl, mix the Greek yogurt, cucumber, lemon juice, garlic, dill and salt. Taste and adjust anything to your preference!
3. Stir cooked rice into yogurt dip and set aside.
4. In another bowl, stir together shrimp, cucumber, olives, tomato, onion, parsley, lemon juice and salt.
5. To eat, layer a tostada with tzatziki rice and shrimp salad. Option to garnish with feta cheese, radish, and more fresh herbs and lemon. Enjoy!
