Chocolate (Rice) Mousse

This 3-ingredient chocolate mousse is proof that simple ingredients can create something truly decadent.

Made with Ralston Family Farms Jasmine Rice

Ingredients

2 cups cooked Ralston Family Farms Jasmine Rice or Basmati Rice

2 cups bittersweet chocolate chips

¾ - 1 cup hot water

Optional Garnishes


Cocoa or cacao powder

Jam or preserves

Fresh berries, we used strawberries 

Powdered sugar

Instructions

  1. Melt dark chocolate in microwave for 30-second intervals, stirring each time, until melted, careful not to overcook. (You can also use a double boiler if preferred.)
  2. In a blender, combine cooked rice with melted chocolate and hot water. Blend until mostly smooth.
  3. Consistency should be a little softer than what you want the final consistency to be because it will thicken as it sets.
  4. Put into one large container or 2-4 single-serving containers. Cover with plastic wrap or parchment or option to dust with cocoa or cacao powder. 
  5. Refrigerate 1-3 hours to set and enjoy! If you make more than 3 hours in advance, let it come to room temperature before enjoying. 
  6. Option to serve with jam, whipped cream, fresh berries, and/or a dusting of powdered sugar!
