Ingredients
1 cup Nature’s Blend Rice
1 Cucumber
1/2 cup of Cherry Tomatoes
½ Red Onion
1 cup of Red Pepper Hummus (or your favorite Hummus)
1/3 cup Capers
½ cup Feta Cheese
Juice of ½ Lime
Directions
Make Natures Blend Rice according to instructions on the carton. Slice cucumbers and Red Onion thinly. Cut tomatoes in half. Put 1/3 cup of Nature’s Blend in a bowl then add 1/3 cup of your favorite Hummus alongside of Nature’s Blend in the same bowl. Top Nature’s Blend Rice with Tomatoes, Onion, and Capers then sprinkle Feta Cheese and squeeze fresh Lime juice over the whole thing!
