Meatless Tacos

Directions

Pour three cups of cooked rice into a greased skillet. Add in taco seasoning and stir to coat. Then add tomato sauce, onion, jalapeno, salt and pepper to skillet and stir to coat. Finally add in vegetable stock. Turn down and simmer until the liquid is absorbed and the mixture takes on a taco meat consistency. Serve just as you would regular taco meat! 
**For a more meat-like texture, pulse cooked rice in the food processor a couple of times before making the meatless tacos.
