Ingredients
1/2 cup each of lentils, tri-color quinoa, and Ralston Family Farms Purple Rice
2 zucchini’s, chopped
1 bundle of asparagus, tips only
1 broccoli crown, chopped
1 cup of kale, chopped
1/2 cup of edamame
1/4 cup of roasted pepitas
1-2 tbsp of avocado oil
Trader Joe's chicken-less seasoning salt and pepper, to taste
juice from 1/2 a lemon
Tahini Dressing:
4 tbsp of sesame tahini
8-10 tbsp of water
juice from half a lemon
salt, pepper, and garlic powder to taste
