Mango Purple Sticky Rice
This recipe is inspired by travels to Thailand. Mango
sticky rice is a popular dessert there. The texture & the sweet &
savory combo is an incredible combination! This purple style mixup is
a mashup of Japanese style purple rice. Purple rice has a more firm
texture & basmati has a fluffier texture. The two work so well
together.

Ingredients
½ cup Purple Rice Ralston Farms
1 ½ cups Basmati Rice Ralston Farms
14oz can lite coconut milk
3 star anise
2 pinches of salt
4 cups of water
½ cup sweetened shredded coconut
2 cups fresh mango, diced
1 tsp vanilla extract
¼ cup of sugar
Directions
The purple rice and basmati rice will be cooked separately. The purple rice takes longer to cook, approximately 45 minutes. Place a medium sized pot over low heat and add the whole can of coconut milk, the purple rice, pinch of salt, star anise, all of the sugar, vanilla and 1 cup of water. Cook for approximately 30-40 minutes until the liquid is more syrupy. Once at this stage, remove the star anise, turn off the heat, cover with a lid for 10 minutes. While the purple rice is cooking, start the basmati rice. Place a medium size pot over medium/low heat. Add the basmati rice, 3 cups of water and a pinch of salt. Cook according to the package's directions. Once cooked and fluffy we will combine the two rices. Place in the fridge to chill completely. The combination should be a pretty purple, top with coconut, mango and enjoy!
