Carolina Red Rice

This Carolina Red Rice recipe is a savory one-pot meal complete with Golden Rice, pancetta, onion, and stewed tomatoes. It will certainly become a family favorite. Easy to make and ready in less than 30 minutes, this recipe is soul food at its best!

Step 1

Roughly chop celery and onion.

Step 2

Place pancetta in skillet and fry on medium heat until crisp. Remove pancetta dn leave any fat in the pan.

Saute

Step 3

Pour in 1 tablespoon of avocado oil and then add celery, onion and rice. Saute veggies and rice for 2 minutes, stirring all the while.

Simmer

Step 4

Add stewed tomatoes with juice. Leave on a simmer until rice has absorbed almost all of the tomato juice, then add chicken stock, salt, pepper and bay leaf. Simmer for 15 min or until rice has absorbed most of the liquid and is cooked. Add back the pancetta and give a good stir.
