COCONUT LIME RICE PUDDING

Made with Ralston Family Farms Jasmine Rice
Ingredients
- 1 cup Ralston Family Farms Jasmine Rice, rinsed
- 1 (13.5 oz) full-fat unsweetened coconut milk
- 1.5 cups heavy cream
- 1 tbsp unrefined coconut oil
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 2 tbsp fresh squeezed lime juice
Garnish
- Unsweetened coconut flakes and lime zest
Instructions
1. Add rinsed rice, coconut milk, heavy cream, coconut oil, coconut sugar and salt to a medium-sized pot and bring to a boil
2. Reduce heat to simmer and cover with lid
3. Simmer for 17 minutes stirring every few minutes to prevent rice from sticking/burning
4. Remove from heat and let rest with lid for 5 minutes
5. Add lime juice and mix
6. Let rest for an additional 5 minutes without lid to cool and continue mixing periodically
7. Garnish with coconut flakes and lime zest
8. Serve warm and eat immediately! Enjoy!
