Jambalaya
Who else loves jambalaya? It’s comfort food at its best and is so easy to make!
Made with Ralston Family Farms Basmati Rice
Ingredients
- 1lb large shrimp, cleaned
- 1lb andouille sausage, sliced
- 1 green bell pepper, diced
- 1 tbsp olive oil
- 1 celery stalk, diced
- 1 red bell pepper, diced
- 2 large garlic cloves, diced
- 1 1/2 tbsp cajun seasoning
- 1 tsp thyme leaves
- ½ tsp oregano
- 2 tsp kosher salt
- ½ tsp black pepper
- 14 oz can diced tomatoes
- 1 tbsp worcestershire sauce
- 1 large onion, diced
- 1 ½ cups Ralston Family Farms Basmati Rice
- 2 ¾ cup chicken stock
Topping
- Parsley for garnish
Instructions
- Place a large deep skillet over medium heat. Add the olive oil and onion.
- Cook until the onion is translucent.
- Add the diced peppers and celery.
- Cook for a few minutes and add the sausage, all seasonings, tomatoes, worcestershire sauce, chicken stock and rice.
- Mix well, reduce heat to med/low and cover.
- Check on it after 8-10 minutes, give a quick stir and cover.
- Recheck in 8-10 minutes. The rice should be cooked, add the shrimp and mix in.
- Cover and cook for an additional 5 minutes.
- The shrimp should be fully cooked.
- Top with parsley and enjoy!
