Jambalaya

Who else loves jambalaya? It’s comfort food at its best and is so easy to make!

Made with Ralston Family Farms Basmati Rice

Ingredients

  • 1lb large shrimp, cleaned
  • 1lb andouille sausage, sliced
  • 1 green bell pepper, diced
  • 1 tbsp olive oil
  • 1 celery stalk, diced
  • 1 red bell pepper, diced
  • 2 large garlic cloves, diced
  • 1 1/2 tbsp cajun seasoning
  • 1 tsp thyme leaves
  • ½ tsp oregano
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • 14 oz can diced tomatoes
  • 1 tbsp worcestershire sauce
  • 1 large onion, diced
  • 1 ½ cups Ralston Family Farms Basmati Rice
  • 2 ¾ cup chicken stock

Topping

  • Parsley for garnish

Instructions

  1. Place a large deep skillet over medium heat. Add the olive oil and onion. 
  2. Cook until the onion is translucent. 
  3. Add the diced peppers and celery. 
  4. Cook for a few minutes and add the sausage, all seasonings, tomatoes, worcestershire sauce, chicken stock and rice. 
  5. Mix well, reduce heat to med/low and cover. 
  6. Check on it after 8-10 minutes, give a quick stir and cover. 
  7. Recheck in 8-10 minutes. The rice should be cooked, add the shrimp and mix in. 
  8. Cover and cook for an additional 5 minutes. 
  9. The shrimp should be fully cooked. 
  10. Top with parsley and enjoy!
