Jambalaya

Ingredients

1lb large shrimp, cleaned

1lb andouille sausage, sliced

1 green bell pepper, diced

1 tbsp olive oil

1 celery stalk, diced

1 red bell pepper, diced

2 large garlic cloves, diced

1 1/2 tbsp cajun seasoning

1 tsp thyme leaves

½ tsp oregano

2 tsp kosher salt

½ tsp black pepper

14 oz can diced tomatoes

1 tbsp worcestershire sauce

1 large onion, diced

1 ½ cups Ralston Family Farms Basmati Rice

2 ¾ cup chicken stock

Topping: Parsley for garnish

Directions

Place a large deep skillet over medium heat. Add the olive oil and onion. Cook until the onion is translucent. Add the diced peppers and celery. Cook for a few minutes and add the sausage, all seasonings, tomatoes, worcestershire sauce, chicken stock and rice. Mix well, reduce heat to med/low and cover. Check on it after 8-10 minutes, give a quick stir and cover. Recheck in 8-10 minutes. The rice should be cooked, add the shrimp and mix in. Cover and cook for an additional 5 minutes. The shrimp should be fully cooked. Top with parsley and enjoy!
