Pumpkin Sage Rice
Ingredients
2 cups Ralston Family Farms Golden Rice
3 tbsp pumpkin purée
Olive oil
4 cloves garlic, chopped
3 sage leaves- 2 sliced, 1 for garnish
Cracked black pepper, to taste
Sea salt, to taste
3 tbsp pepitas
Directions
Cook rice according to package instructions. Before covering with a lid, mix in 1 tablespoon of pumpkin purée. In a small sauce pan add olive oil, garlic and sage. Sauté for 3-4 minutes mixing often. Set aside. Heat olive oil and pepitas in the pan for 3 minutes stirring often. Add garlic + sage mixture to the rice along with 2 tablespoons of pumpkin purée, salt, pepper and pepitas (save some pepitas for the topping). Gently fluff rice using a fork until fully mixed. Top with remaining pepitas and sage leaf before serving.
