"Some Kind of Good" Grits Casserole
Try this spicy grits casserole to liven up your dinner menu. Perfect as a side dish or main, your crew will eat it until it's gone.
Made with Ralston Family Farms Golden Rice Grits (6 Pack)

Ingredients
1 Cup RFF Golden Grits
4 Cups Chicken Stock
1 Cup Half-n-Half
1/8 Cup Frank’s Buffalo Sauce
½ Cup Oven Roasted Tomatoes or Jarred Dried Tomatoes
10 to 15 slices of Jalapeno (more or less to your taste)
5 Tablespoons of Cream Cheese
1 Teaspoon Salt
¼ Teaspoon Pepper
Directions
Turn on the oven to 375 degrees Fahrenheit
The amount of liquid to Grits when baking is 5 to 1. Depending on the size of portions, this should serve between 4 to 6 people.
Pour Grits into a 9x13 Casserole Dish. Pour Chicken Stock and Half-n-Half over the Grits, giving them a good stir. Add in Tomatoes, Jalapeno, Salt, and Pepper, giving another good stir. Dollop the Cream Cheese on top of the mixture and then drizzle the Franks Buffalo Sauce over the entire Casserole.
Place in oven and bake for 40 minutes. You may want to check after 30 minutes to see if done as ovens vary in temperature.
Serve right out of the oven and enjoy with some Sweet Tea!
