6 pieces diced thick cut bacon
1/4 cup diced red onion
5 garlic cloves (minced)
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups Ralston Family Farms Red Rice
3 1/2 cups chicken stock
2 Tablespoons unsalted butter
In a large pot cook bacon until almost crispy. Add garlic and cook 1 minute, stirring the whole time. Next, add rice and toast for 2 minutes, stirring occasionally. Add salt, pepper and chicken stock and bring to a boil.
Reduce heat and cover, cooking for about 60 minutes until tender.
Stir in butter and serve.
Serving Suggestion: Serve over blue corn chips with curry pickled red bell peppers, queso fresco and green onion.
This amazing rice retains much of its texture and is a great center piece for any dish!
