1 1/2 cups Ralston Family Farms Golden Rice
3 cups chicken stock
2 oranges, zested and juiced
3/4 cup dried apricots
3/4 cup golden raisins
1 1/2 Tablespoons ground cumin
1 Tablespoon ground coriander
1 1/2 Tablespoons sea salt
1/2 teaspoon freshly grated black pepper
2/3 cup toasted pine nuts
1/2 cup fresh flat-leaf parsley, chopped
Cook rice and stock in a rice cooker or on stove-top. Cover if stove-top cooking, bring rice and chicken stock to a boil. Reduce heat to simmer and cover. Cook until all liquid is absorbed, about 20 minutes.
Add orange juice and zest to rice while it is still warm. Stir in apricots, raisins, shallots, spices, salt and pepper. Add pine nuts and parsley. Serve warm, at room temperature, chilled, or reheated.
